Mini Meatloaves

I found this recipe for Mini Meatloaves and knew I just had to share it.  I’ve made this recipe several times and each time it was delicious!  This is another Kraft recipe.  🙂

Using the muffin pan to make muffins instead of the traditional loaf style cuts the baking time in half.  Who doesn’t love saving time in the kitchen?

Here’s what you’ll need:

ingredients mini meatloaves

1 lb. ground beef

1 pkg. (6 oz.) Stove Top Stuffing

1 cup water

1 tsp. garlic powder

3/4 cup barbecue sauce

3/4 cup shredded cheddar cheese

Here’s what you do:

ingredients 2 mini meatloaves  

1.  Heat oven to 375*F.  Mix meat, stuffing mix, water and garlic powder.  Press into 12 muffin cups sprayed with cooking spray.

2.  Make an indentation in center of each meatloaf with spoon; fill with barbecue sauce.

3.  Bake 30 minutes or until cooked through.  Top with cheese; continue baking 5 minutes or until cheese is melted.

There are variations on the Kraft website that give it just a little bit different flavor.  Let me know if you try it and if you like it!

Super Easy Chicken Parmesean

Tonight for supper I made my “Super Easy Chicken Parmesean” and it turned out so yummy!!

Now I don’t have any prep pics or anything but it is so simple it won’t matter.  Basically you just need:

  • Frozen chicken patties or chicken nuggets
  • Spaghetti sauce
  • Spaghetti noodles, cooked
  • Mozzarella cheese

You cook the frozen chicken patties/nuggets according to the directions on the package and about 5 minutes before they are done cover the patties/nuggets with spaghetti sauce and sprinkle on some mozzarella cheese.  Serve over spaghetti noodles.
